Here goes my first recipe post! Please bear with me as I learn all the ins and outs of having a blog and my amateur photography skills, I’m working on it! 🙂
This has to be one of my absolutely FAVORITE recipes of all time!!! It’s the best mixture of comfort and healthy. I absolutely HATE when you take away some calories and it also takes away all the taste. Now this may not be the healthiest recipe if you eat half the casserole in one sitting (yes I’ve done that before), but its a great addition to any meal!
Healthier Mac and Cheese
A lighter version of your favorite comfort food.
Calories per serving: 310
- 2 cups uncooked pasta (I recommend medium shells or rotini)
- 2 cups (8 oz) shredded cheddar
- 1 cup lowfat cottage cheese
- ½ cup skim milk
- ½ 0% plain greek yogurt
- ½ tsp salt
- ¼ tsp pepper
- 1 egg
- ½ yellow onion
- ¼ cup whole wheat panko breadcrumbs
- 1 tbsp butter
- ¼ tsp paprika
DirectionsPre-heat oven to 350 degrees F. Prepare a baking dish with non-stick cooking spray.
Cook pasta to al-dente according to the directions on the box. The pasta will continue cooking a bit in the oven.
While pasta is cooking, in a separate bowl, mix together the cheddar cheese, cottage cheese, milk, greek yogurt, salt, pepper, egg and diced onion. Drain pasta and add to mixture. Mix together. Transfer the mixture to the prepared baking dish and cover with aluminum foil. Bake 25 minutes covered and 5 minutes uncovered. Remove from the oven and enjoy!
